Title: Cucumber Sweet Pickle (Short Process)

Yield: 4 Quarts

1gaCucumbers
6cSugar
1cSalt
1cWater
1 1/2qtVinegar
2tbMixed spices

Wash cucumbers and wipe them dry. Dissolve salt in 1 gallon cold water and pour over cucumbers. Let stand 24 hours and drain. Puncture each cucumber 3 times with a needle. Combine 1/2 of the sugar, vinegar, water, and spices. Simmer liquid for 30 minutes. Add cucumbers to liquid and continue to simmer 15 minutes. Let stand in a jar for 2 days. Drain off the liquid and pack pickles in hot jars. Add remaining sugar to liquid and boil for 5 minutes. Pour over pickles and seal.
